The distinction between canoeing or kayaking is not a large one. The term canoe, strictly speaking, covers kayaks as well, as it is an umbrella term for long paddle propelled watercraft.
To the casual observer the difference can go unnoticed. However, the difference is that kayaks are covered. In a kayak you sit with your legs outstretched under the top-cover of the craft. A canoe, on the other hand, is open topped allowing the user to sit or kneel and paddle.
